Cinnamon Clemey Cake

This old family favorite serves about 30. Be sure to mix this cake with a wooden spoon, not an electric mixer.

Sift together in a mixing bowl:
3 cups all purpose flour
3 cups white sugar

Bring to a boil in a saucepan:
3 cubes butter or margarine
6 tbsp cocoa
1-1/2 cups water

Pour hot mixture over flour/sugar mixture. Stir until well blended.

Add:
3/4 cup buttermilk (regular mild works too, just gives it a slightly different flavor)
1-1/2 tsp baking soda
3 lightly beaten eggs
1-1/2 tsp vanilla
1-1/4 to 1-1/2 tsp cinnamon (to taste)

Mix well and pour into a greased cookie sheet (PAM-type spray works as well). Bake @ 375 for approximately 20 minutes.

While cake is cooling slightly, prepare chocolate icing:

Combine in sauce pan and cook on medium heat:
1-1/2 cubes of butter
6 tbsp cocoa
7-1/2 tbsp milk
Careful, this scorches easily!

In a mixing bowl, combine:
1-1/2 lb powdered sugar (about 1-1/2 boxes)
1-1/2 tsp vanilla

Add saucepan mixture slowly, beating constantly. Mix well until lumps are gone. Pour over warm cake and cut when the icing is set.  This cake is great fresh from the oven or a couple days later (although my personal fav is hot, served over vanilla ice cream!). Enjoy!
