This is a recipe I threw together one afternoon when I realized that my kids would never eat the actual club sandwiches I had planned for dinner, and it ended up tasting darn good!
1 box whole wheat rotini pasta (around 14 oz.)
2 chicken breasts or 7-8 chicken breast tenders
4 slices cooked bacon (I just discovered pre-cooked bacon, which works great for this recipe), chopped
1 ripe avocado, chopped
2 to 4 slices provolone cheese, chopped
1/4 cup green onion, chopped
1/2 to 1 cup low-fat mayonnaise
Cook pasta according to box instructions. While waiting for the water to boil, cut the chicken into bite-size pieces and cook in a skillet. Use a tablespoon or so of cooking oil to cook the chicken, and season it with garlic salt and lemon pepper to taste.
Once the pasta and chicken are done, drain water from pasta and rinse in cold water (so the heat doesn’t melt the cheese!). Mix pasta and chicken in large bowl and add about 1/4 cup of the mayonnaise and mix until chicken and pasta are well coated. Add chopped ingredients, then add mayonnaise, 1/4 cup at a time, until desired consistency is reached. Season to taste with garlic salt and pepper.
Serve with sourdough bread and cold grapes for a fabulous dinner. =)
