Salsa Chicken

Serves 8-10 adults; This recipe was created by my mom, and is excellent for doubling, tripling, or whatever-ing for a crowd!

4-5 frozen chicken breasts
1-1/2 cups salsa (pick your heat dependent on who’s eating)
1 cup sour cream
1-1/2 cups cheese (something strongly flavored, like sharp cheddar, is best)
2-3 cups uncooked rigatoni noodles

Place the frozen chicken and salsa in a slow cooker. Allow to cook on high for 4-5 hours, checking occasionally to prevent burning. At this point, start the water for the noodles. Turn the slow cooker to low, then shred the chicken using 2 forks (it should mostly just fall apart at this point). Add the sour cream and cheese, mix well, and allow to cook for another 20 minutes, or until everything is creamy and hot.  Don’t forget to cook your noodles!

Serve the chicken hot over pasta. This recipe also makes excellent leftovers, so don’t be afraid to try it if your family is small.
